GUACAMOLE
Serves 8
2 large ripe avocados
¼ cup chopped cilantro
2 tablespoons minced red onion
2 tablespoons Mexican crema or sour cream
⅛ teaspoon ground coriander
⅛ teaspoon ground cumin
⅛ teaspoon curry powder
2 garlic cloves, minced into a fine paste
finely grated zest of 1 lime
juice of 1 lime
salt to taste
freshly ground black pepper
Cut avocados in half, remove seeds, slice flesh into small squares with a knife, and spoon the flesh into a medium mixing bowl. Add the
remaining ingredients and mash gently with a fork until the guacamole is partly smooth with some small bits of avocado remaining. Season to taste with salt and pepper.
